Blythes Favorite French Toast

 

2 slices Ezekiel Bread (low sodium is the absolute BEST)
1 whole egg and 1 white
dash of cinnamon
natural peanut butter
natural fruit spread or sugar free syrup or honey
Coconut oil
Whip eggs and cinnamon in a med. bowl whilie pre-heating griddle.
Dip bread (both sides) into egg wash and place on griddle. Let cook until golden brown.

Pumpkin Breakfast Frittata

 

Makes around 8 servings
Ingredients:
8 eggs
2 tablespoons chives
1/2 cup spinach
3 tablespoons onion flakes
3/4 cup bacon or ham
1 cup low-fat mozzarella
1 cup cooked pumpkin
1 tablespoon Parmesan cheese
dash of salt and pepper or Mrs. Dash
Directions:
Preheat oven to 350 F.

Soft Boiled Egg on Toast

 

Makes 4 servings
Ingredients:
4 eggs
4 tbs. non-fat plain yogurt
4 pieces of toast (Ezekiel, P28 High Protein Bread, or Melba is best)
Salt and Pepper or Mrs. Dash seasoning to taste

EGGS… are they REALLY the PERFECT SNACK for Fat Loss?

 

As a health nut and busy working mother of 3, I am someone who is always looking for a high protein snack, I have found that eggs are something that appeals to nearly everyone and I tend to enjoy often! With so many recipes and ways to cook them, they rarely fall on that list of ‘things I’ll never eat again’. Eggs are easy to eat, not too messy and great for on the go eating (I know most of us are looking for healthy on the go snacks!).
