2 small sweet potatoes (each around 5-6 ounces)
2 oz soft goat cheese
1/4 cup fat-free cottage cheese
2 T skim-milk ricotta cheese
Salt and Pepper to taste
1 sliced green onion
Paprika to taste
Preheat oven to 400. Clean potatoes and prick with fork; then microwave for 6 minutes or until they’re done. When cool enough to handle, cut the potatoes lengthwise and scoop out the insides into a small bowl. Set the skins aside.
Mash the cooked potatoes with the goat cheese, cottage cheese, ricotta cheese, salt, and pepper. Distribute the mixture between the skins. Top each potato with paprika and green onion.
Microwave until hot. So good!!
